In traditional kitchens around the world, this everywhere herb was cherished for its healing properties and always paired with fat, like in chimichurri, because the beneficial compounds in parsley need fat to be properly absorbed in the gut.
It’s a beautiful reminder that true wellness and beauty rituals always began in the kitchen.
Parsley is a nutrient-rich powerhouse, offering far more than color or a burst of flavor. It’s the richest natural source of apigenin, a powerful flavonoid that supports the “youth hormone” progesterone, calms inflammation, and protects cells from stress. Apigenin helps balance hormones by lowering excess estrogen, cortisol, and supporting thyroid function, all of which create the foundation for healthy, glowing skin and overall vitality.
But parsley’s gifts don’t stop there. It’s packed with vitamin K, which supports strong bones and healthy blood, and offers generous amounts of vitamins C and A, along with potassium a hard-to-obtain mineral from food alone that helps maintain healthy blood pressure, fluid balance, and mineral balance. Together, these nutrients nourish your skin and strengthen your overall vitality from the inside out.
Parsley also acts as a gentle kidney detoxifier. Its natural diuretic properties encourage the body to release excess fluid and support the elimination of waste through the kidneys. This helps keep the urinary system clear and functioning smoothly while reducing water retention and puffiness.
Parsley on its own is a wonderful way to brighten any meal. I love sprinkling it over soups, casseroles, and even cottage cheese. It adds freshness, flavor, and a boost of nutrients to just about everything I make. You don’t need much, even one tablespoon offers generous amounts of key vitamins and minerals.
If you really want to experience parsley’s benefits, try enjoying it the traditional way. My personal favorite is Chimichurri, a vibrant blend of parsley, olive oil, vinegar, garlic, and spices. It makes the most flavorful marinade for meats, chicken, fish, or shrimp and doubles as a delicious dipping sauce once everything’s cooked.
Tabbouleh is a fun way to experience salad in a new way and Gremolata as an addition to any meal; sprinkle it over fish, chicken, rice and veggies.
Chimichurri - marinade and dipping sauce
⅓ cup extra-virgin olive oil
2 tablespoons white wine vinegar
1 garlic clove, minced
½ teaspoon sea salt
¼ teaspoon dried oregano
¼ teaspoon red pepper flakes
½ cup finely chopped fresh flat-leaf parsley, (from about 1 bunch of parsley, coarse stems removed)
In a small bowl, whisk together the olive oil, vinegar, garlic, salt, oregano, red pepper flakes. Stir in the parsley. Alternatively, you could combine the ingredients in a mortar and pestle or with a few pulses in a food processor.
Tabbouleh - serve as a salad alongside your meal
1 cup fine bulgur (sometimes called #1)
2 bunch curly parsley
12 large mint leaves
1/2 English cucumber
5 scallions
3 medium tomatoes
2 lemons, juiced (about 6 tablespoons)
1/2 cup extra-virgin olive oil
1 pinch salt and pepper, plus more to taste
Put the bulgur in a bowl, cover it with an inch of just-boiled water, and let it sit at least 20 minutes. (It will double in size.)
Wash and dry the parsley and mint. Remove the stems, finely chop the herbs together, and put them in a large mixing bowl.
Peel and deseed the cucumber half. Slice it lengthwise into thirds, then chop.
Chop the scallions and tomatoes and add them to the cucumber, parsley, and mint.
Drain any remaining water out of the bulgur and add it to the vegetables.
Add the lemon juice, olive oil, salt, and pepper to the salad. Mix well, taste, and adjust the seasoning and olive oil as needed.
Gremolata - Sprinkle over everything!
1 bunch fresh parsley, finely chopped (about ¾ cup)
2 teaspoons lemon zest
1 garlic clove, grated
⅛ teaspoon sea salt
In a small bowl, stir together the parsley, lemon zest, garlic, and salt.
