In nearly every gut-healing protocol, hair-nourishing ritual, or ancient beauty secret, one ingredient always seems to rise to the surface: gelatin. Long before it became trendy, our ancestors understood its power; a deeply restorative, mineral-rich food that mends, strengthens, and beautifies from the inside out. It has always been, and will always remain, one of the most profoundly healing gifts we can offer our bodies.
And as we step into the world of healing soups, it feels only right to begin with this timeless medicine, and my favorite recipes to keep you nourished and strong all winter.
Before we get into the recipes, let’s learn the basics. What is gelatin and why it’s one of the most restorative foods you can eat.
Gelatin begins as collagen, the structural protein found in the connective tissues of animals, including skin, bones, cartilage, tendons, and ligaments. When these parts are cooked, the collagen breaks down into gelatin. Gelatin contains several important amino acids, especially glycine, proline, hydroxyproline, and glutamine, which support gut repair and tissue regeneration, keeping the gut barrier strong and healthy. All of these soups will naturally contain a generous amount of gelatin, making them a deeply nourishing and truly healing food.
Some of these recipes were originally written with store-bought broth. I always recommend making your own when you can because the flavor and nutrient content are so much richer. But if you’re in a pinch, a good-quality store-bought broth works fine too. I skip the chicken bouillon all together and use the Better Than Bouillon brand instead when needed.
Stay tuned for my high-gelatin broth guide coming next week. I’ll walk you through exactly how to make your own broth at home using the animal cuts with the highest collagen so you can get the most healing benefits in every batch.
Avgolemeno | Greek Chicken Soup
There are so many Avgolemono recipes out there, and I’ve tried quite a few. This one is by far the best. I especially love the addition of egg yolks because they give the soup a velvety texture and a richer nutrient profile. It’s the recipe I return to again and again, and I enjoy it several times a year.
Albondigas | Mexican Meatball Soup
This recipe is truly superb and one I love so much. Tender meatballs simmered in a rich, flavorful broth with plenty of vegetables… absolute perfection. We top our bowls with a shredded cheese, a squeeze of lime, and a dollop of sour cream. Chef’s kiss every time.
